My field Category is displaying the Name for the user select, I want to change it to another instead of Name.

I believe what you want is to change the Entry title of that field.
Click on Configure the view on the right panel and then click on the pencil icon in Category field.
In my case I can select my Title field as entry title, but it does not change the displayed value in the relation. It’s showing the category instead because I made that field earlier then the Title. npm i, rerun npm run develop or restarting the site in the browser does not change the displayed field. Even though when i check the configure the view again, it shows the Title as the entry title.
